Without Ice Pops…
…My World (And My Make Up) Would Have Melted Away By Now!
I used roll my eyes at people who dared complain about the hot weather. Now – despite the webbed feet I developed during the wet winter – I am right there amongst them, mopping my brow, huffing and puffing, and moaning every time I see that familiar yellow circle of sun on the weather.
Is this honestly what I have been reduced to? A sniveling, hot, sweaty mess of a summer grump?
OK, so it’s hotter than usual, my hair is frizzier than candy floss, and my skin is crispier than bacon, so what? I would never ever have believed I’d join the sun shunners club and decided it was time to turn my heated frown upside down and appreciate the long-awaited summer sunshine. It was time for me to get cool.
Thigh fattening ice cream? Get outta my way! Tooth decaying frappuccino? No way José! Frozen Margaritas? … not until 5pm!

These Easy, Peasy Pineapple Popsicles are healthy, refreshing and contain just three ingredients. Simply add pineapple, milk and honey to a blender, whizz until smooth and freeze in your favourite Ice Pop Moulds.
This isn’t a boring regimented recipe, so adapt it at your will: if you don’t like honey, use stevia or agave nectar; if you don’t like pineapple, give mango a try; and you can also substitute the cow’s milk for soya, coconut – oooh, Piña Colada! – or your fave nut milk. Using milk in these pops, gives them a smooth and creamy consistency, while the pineapple makes them pop with tropically fruity flavour – have I tempted you yet?
I used these Tovolo Groovy Ice Pop Moulds for this post. The sturdy stand holds the moulds in place for easy filling, freezing and move-ability, and the handles are designed to catch the drips – so you don’t become a big hot mess if you’re a slow eater like me!
